HEALTH BENEFITS OF FENNEL
Fennel, with it’s unique licorice like flavour has many health benefits and has been used in many cultures for its medicinal properties. In ancient Chinese medicine, fennel has been used to help with a variety of ailments from congestion, help with stomach upset, insect bites, sore throat and can even help to increase the flow of breast milk.

Ingredients
Salad
- 1 zucchini spiralised
- 1 cup Fennel sliced
- 1 cup Carrots grated
Dressing
- 1/4 cup Tahini
- 1/4 cup Lemon juice
- 1 clove Garlic minced
- 1-2 Tbspns water
- Salt & Pepper to taste
Instructions
Salad
- Spiralise the zucchini and place it in a large salad bowl. If you don’t own a vegetable spiraliser, use a vegetable peeler to make long strips. Discard the seeded middle portion.
- Add fennel and carrots to your zucchini.
- Stir through Tahini Dressing
Dressing
- Combine the ingredients in a small bowl and whisk with a fork.
- Add more water to thin the dressing, if desired.
- Serve salad
